A taste of things to come...

Trade 5 students have begun trialling menus for the Monday night restaurants.

Following is a sample from Todd Farrells menu.

Grilled salmon with a coriander broth on Asian greens

Smoked quail on rocket and waldorf salad



Seared fillet steak on gratin potato with bean bundles and tomato tartlet
Char grilled lamb tenderloin on pumpkin confit and wilted spinach






Chocolate pudding with white chocolate sauce
Macchiato Panna Cotta

Welcome to 2007

Hi all,
Welcome to semester 1, 2007.
It has been some time since the blog has been updated so please scroll down to check some of the recent additions including photos from last year and job opportunities too.

Degustation Dinners

Semester 2, 2006 saw the continuation of The Vinery Degustation Dinners. Trade 5 students (see photo below) worked alongside a guest chef to produce delectable 6 course menus that were served by Certificate 2 & 3 Hospitality Operations students

Christie Zysec winner of Rotary Award


Christie Zysec, Hospitality Operations student was presented with The 2006 Cessnock Rotary Hospitality Encouragement award at a dinner held at The Vinery Restaurant.
